Whole slotted peas Aleyka

Slotted peas are rich in proteins which are complete due to their aminoacid content (similar to the proteins contained in meat). Owing to their good solubility in water, they are well-absorbed by the body. Moreover the nutritional value of peas is by 1.5-2 times higher than that of potatoes and other vegetables.

Pea soup
Ingredients:
  • 500 g side of beef
  • 250 g of Aleyka whole peas
  • 100 g of carrots
  • 100 g of parsley root
  • 1 middle-size onion
  • some sunflower seed oil Aleyka
  • salt, pepper (to your liking)
  • 2 laurel leaves
  • 50 g of smoked meat (ham, fore shank, fat with skin)
Directions:

Presoak the peas in cold water for 3-4 hours. Boil the beef stock, add the swollen peas and boil till it is ready for about 1 hour.

Chip the carrots, parsley root and onion, fry them a little. Cut the smoked meat and add together with vegetables into the soup. Add salt, pepper, laurel leaves (to your liking) and boil for 10-15 min more. Serve the soup with dry bread crumbs made of white or rye bread.
